Chicken Biscuit Casserole

chicken thigh ~ cheddar biscuit dough ~ peas ~ corn ~ cream of chicken ~ chipotle hot sauce ~ white rice


 You can never go wrong with cheddar biscuits. Joe had the ingenious idea of adding cheese to what was going to be JUST a chicken biscuit casserole. Oh, ho, ho, my friends - it became so much more. We usually buy chicken thighs because they're cheaper so the meat in the casserole was dark.  The chipotle hot sauce gave a nice subtle spicy kick to the whole dish as well.

Pasta Carbonara

Pasta Carbonara with Kale.

rotini pasta ~ head of garlic ~ small onion ~ eight leaves of fresh ~ basil ~ olive oil ~ salt/pepper ~ oregano ~ egg

Joe is a big fan of pasta so we end up having it often. I've convinced him to step away from just dumping red sauce over various types of pasta and it has allowed him to explore other ways of dressing up his favorite carb. This dish was excellent (as are all of his dishes) but I let him know I thought the garlic and onion could have been cooked a little longer. I do love that pungent garlic taste.

The Intro

I decided to put together this blog to chronicle my fiance's amazing cooking skills. He, more often than not, will cook something for dinner on whim; throwing things together without hesitation and emerge with a tasty new dish that has no name and will probably not be replicated after the night it was conceived. There are some dishes I want him to make again but neither of us can ever remember what he put in or how much. Those dishes are gone to the wind. But no more! I'm determined to make a note of every onion he chops, every chicken he bakes, and every "hey it worked!" moment.
